The Blanc de Noirs 2011 Extra-Brut (4gr/l) has been elaborated only from Grands Crus of Pinot Noir from the village of Aÿ and several years of maturation on lees (7 years). This is an original cuvée, as it is the first to be made solely from this grape variety since the creation of the House of Bollinger in 1829.
This Champagne, with its golden hues, possesses a rare complexity and amplitude, offering nuances of stewed fruits, toasted notes and honey, all punctuated by a long mineral finish.

The traditional Spéciale Cuvée is made from Grands Crus of 60% Pinot Noir, 25% Chardonnay and 15% Meunier.
This golden-coloured Champagne has aromas of apple, citrus, caramel and hazelnut.
The finish is marked by notes of toast and brioche.
